Profile Fields can be edited and customized to suit your needs. You can also delete or create new profile fields as well. You can decide which fields are searchable, editable, etc, etc.
You can also create or rename the categories for which you want the profile fields to appear under.
Just go the Admin and select "Profile Fields" from the menu and take a look around, with a bit of experimenting it doesn't really take too long to figure out how it works and what you can do.
