Basically I want women and couples to get a paid upgrade for free and dudes to have to pay.
Is this possible?
Also I would like to have it so you cannot change your sex once you sign up.

Hmmm, I think I actually have an answer for you. Well for your second question that is. I've seen someone else mention something along the lines of your first question and the answer was that you'll need a developer for that one.
As for your second question, the answer lays in your admin control panel. Go to your Profile Fields and look under "I am a" and go to edit for this field. In there, you'll see a check box for this:
Editable?
Can the user edit this field? Some fields might just be calculated based on other fields and don't need direct editing.
Uncheck this box, save and don't forget to click the "click here" on this line of text at the top of the Profile Fields list:
Note: If you make changes to your fields please click here when you're done to apply the changes.I tested this out and it works perfectly. No option shows up in the profile edit.
If members make a mistake in their registration, you have the power to go in and fix it for them.
